1. LOVING /// Tomorrow marks the first outdoor Farmer’s Market of the year here in Bloomington. I am sure there won’t be much produce yet but lots of delicious local food, plants, and live music. The first market is what I always consider marks that Spring is officially here.

2. CREATING /// Baker Bettie is hosting her annual Cookie Wars. I was the winner last year (woooo!) with my Hazelnut Shortbread Cookies with Mascarpone Frosting and can’t wait to enter again! If you are looking for some inspiration, check out her post about previous cookie recipes here and don’t forget to enter by May 1st!

3. GROWING /// My seeds are sprouting! There is nothing more rewarding than growing your own food from seed. I decided to invest all of my money that usually goes towards our CSA into our garden. Pretty risky but that means we can not fail! Hope on over to Fox In The Pine’s blog to see her method for starting seeds!

4. EXPLORING /// We originally had a Southwestern road trip planned for the beginning of May. However, the time snuck up on us so we are pushing our big summer trip back to September. That means more time to plan (maybe even go somewhere new instead? Yellowstone? Montreal? San Fran?) and more small trips between. I’m thinking next 3 day weekend we are going to head to the Smoky Mountains.

Let’s talk magazine. I love blogs. They are wonderful – accessible, easy to update, and inspiring. But, in my opinion, they will never compare to having a print version of something. Maybe I’m a collector (I do have an obscene amount of vinyl records when we all know I could just use Itunes). But there is just something about smelling the fresh pages, running my fingers across the inspiring images, and clipping out favorite articles that can not be replicated with blogs.

My favorite part about blogs is that anyone can be a blogger. I am a blogger. I have no job that labels me as a ‘writer’ or no diploma that says anything about ‘design’ on it. You don’t need those labels to blog. And I love that. It’s probably my favorite part about reading blogs. Bloggers are people who are passionate about what they are writing because they aren’t in it (for the most part) to get a check at the end of the day.

I used to be a zine nut before blogging because it was our way of putting our info out there. You could make a cooking zine without a publishing deal. Many magazines have turned into that as well. I mean, you still have Rolling Stone and Bust and Cosmo but you also have the ability to make your own magazines with programs like Issuu and Dreamweaver. We now have magazines like Kinfolk and Pure Green Magazine and Chickpea Magazine. These are products of creative people putting themselves out there by making their own magazines. And they are beautiful. And so much more inspiring than any Cosmo I’ve ever read.

This rant is a product of my excitement from the Spring Issue of Chickpea Magazine which went on pre-order last week. It’s filled with beautiful photography, inspiring vegan recipes, and spring adventures. Lastly, I wanted to give you a little preview of what you can expect from my article in the issue. My article is on homemade house cleaners. In it I talk house plants, DIY recipes, and the drawbacks of pre-packaged house cleaners. This article was so fun to write about because it was one big science project. A constant affair of trying out different ingredients and recipes to see what really got the grime off of that damn kitchen sink. The end results were rewarding and I am so happy to share with everyone some favorite homemade cleaners that I use every week.

The one I am sharing today is shockingly easy and cheap. Its my citrus tub scrub. A piece of citrus fruit and coarse salt. That’s it. How easy is that? It will make your bathroom smell like you’ve been growing a citrus plant in there for years while the acidicity from the fruit will scrub away the grime. The coarse salt is used as an exfoliater to get the hard to scrub spots.

Bathroom Tub Scrub

  • 1 pieces of citrus fruit (the bigger, the more surface area you can cover quicker)
  • Coarse Salt

Cut the fruit in half. Pour a little coarse salt onto the inside of the fruit and gently squeeze out the juice as you scrub the bathroom tub. Apply more salt as needed. Let sit for a few minutes and rinse with water.

Feel free to use leftover fruit to scrub the outside of the toilet, the bathroom sink, or even the floors.

1. Puppies on the mind. We are still on the hunt for an adorable french bulldog to be Tuko’s new playmate. We’ve been going to the animal shelter to look for lovable options but I’ve found it much harder [emotionally] to go there than before we had a dog. Perhaps now that we have the sort of connection with our own pup, it’s hard to see all those dogs not experiencing that loving connection and knowing that some of them never will. It’s just really sad. But it does make me feel good knowing that we could be helping one of those dogs one day soon.

2. There is this underground (literally- it’s in a cellar) hipster bar we go to sometimes (hipster? Don’t believe me – they have a drink called ‘The Pitchfork’). We were there on Thursday night for a friend’s show and I noticed a bunch of jars full of colorful concoctions in the fridge behind the bar. I asked the bartender about one of them and he said ‘Oh. That has ginger, orange, and gin in it. But it won’t be ready until the weekend.’ After that, I couldn’t help but start obsessing over the idea. How does the process work? What were they making? How long does it have to sit? Was it a fruit liqueur? An infused gin? I won’t know unless I go back this weekend (which…it sounds like I have to) but it started getting me thinking about fun infusions. I can feel a weekend project coming on…

3. DEEP DISH PIZZA! What more do I need to say? Growing up, I would spend the weekends taking the train into downtown Chicago with friends. We would go to concerts and eat obscene amounts of deep dish pizza. I find myself craving it from time to time but we don’t really have any deep dish pizza places down here. Best next thing? Guess I’m just going to have to start making my own!

4. So the haircut that has long been tempting me finally came last week. You think I would have got it out of my system but now I’m just obsessing with new hair ideas more than ever. I fear that once the newness of this haircut wares off, I will be left feeling like I have a super boring-plain trim. Quick! I better do something drastic – time to dye it! Should I go bright red using Lush’s organic henna dye or Aveda’s blue-black dye?! Should I do blonde dips or dye a chunk of my bangs blonde? Or do an all over honey blonde color?! So many options!

 

Well, I hope everyone has a wonderful weekend ahead of them! My weekend plans got put on hold because my car is in the shop. This means the next two days will probably consist of a lot of laying around the house (unless I feel like walking…in the snow…and cold). Sometimes it’s good to be stuck in one place – that is when the creativity has to set in. Right? Maybe? I don’t know.

Good afternoon! Before I get to the monthly recap, I wanted to share my excitement with you guys about receiving the new Chickpea Quarterly in the mail yesterday. I have an article on DIY Kitchen Staples (Homemade Vegetable Broth, Vanilla Extract, and Almond Milk) in it. Also, It’s chocked full of vegan recipes, beautiful photography, and oh so much inspiration that I am grinning from ear to ear just looking at it. I thought I was ready for winter to be over but the magazine has re-sparked my cold weather senses. Here are a few highlights (and yes, those are BOURBON CHOCOLATE CAKE POPS pictured below…)

Okay, enough drooling over my favorite magazine – it’s time for a recap! No offense but I am SO glad that February is only 28 days long. With spring on the mind since January 1st, I have been having trouble getting through this month while still feeling present. Instead, my mind has been wondering to beaches, beeragritas, and long bike rides. Here are a few recipes that have helped me kick the winter [mind] wandering..

 

   

 

1. Butternut Squash Mac & Cheese with Gingersnap Crust – Comfort food with a fancy twist. And by fancy, I mean crumbling cookie bits on top of my already insanely indulgent dinner. Not bad…not bad at all…

2. Vegan Stuffed Brunch Biscuits – these were my ‘pride and joy’ of the month. One of those ideas that comes to you at a completely random time and you start to obsess over it until the recipe is executed. Veggie Sausage or Bacon? Scones or Biscuits? Cheddar or Tomato Scones? Southwestern or Indian Tofu Scramble? Mushroom or Pepper Gravy? So many combinations to choose from and the product was an irresistible combination of everything amazing that comes to mind when you think ‘Vegan Breakfast’.

3. Heart Shaped Polenta Crostini with Roasted Tomato & Goat Cheese – Three of my favorite things all in one bite. And SO simple to make. How can it get any better than that?

4. Cinnamon Quinoa Granola – New breakfast go to. Chocked full of fiber, protein, and antixidents. The texture from the quinoa bring a whole new level of granola and this stuff keeps me filled all morning long.

 

Okay, well GOODBYE February and HELLOOOO March. I’m thinking [hoping] March will be filled with more outdoor adventures, road trips, and garden prepping. Yesss!

Morning! Sooo… I have a DONUT recipe for all of you. But that would be wayyy too nice of me to just come out and share my favorite sugary breakfast. If I did that, why would you ever bother to come back? I’d like to keep you around so we are going to just have to wait. Perhaps until later today or maybe even tomorrow? So, check back if Sugary-Blueberry-Lemony deliciousness is your thing (and, sorry, but if it’s not then you are lying to yourself).

But until then, I’ve got some weekend pictures to share with you (think of it as a way to prove myself and show that I am about more than just vegan cupcakes and vegetable soups). Wyatt and I gave ourselves haircuts, went exploring at a nearby state park, and watched a whole lot of X-files (5 episodes down, 195 to go…). I love taking winter as an opportunity to explore those parks which are usually too crowded for us to adventure to in the summer.

And we ended our day trip with massive amounts of breakfast food at a random diner we came across on our way back to Bloomington. As you can see, Wyatt likes gravy piled on EVERYTHING.

1. LEARNING /// I’ve been knee deep in researching home cleaners this week. It’s for an article I’m working on for Chickpea Magazine. I’ve always loved house plants but am now official convinced they are the answer to all my health problems [ exaggeration ]. More on this in the coming weeks…

2. LUSTING /// Our landlord finally [ kind of ] agreed to us getting a second dog. We love love love our boxer puppy but he definitely has a lot of energy and needs a playmate. I have my eyes set on a French Bulldog….

3. CRAVING /// Have you ever seen vegetables look so beautiful? I am blown away at the thought of how delicious this gorgeous stack of Lemon-Rosemary flavored veggies probably are. And lay them over some lentils? Oh goodness – irresistible.

4. ADVENTURING /// We are heading down south to Nashville, TN for the weekend. I am sooo excited about this over due trip because I spent several summers living there and cannot wait to go back after 2 years. Nashville has always brought me a sense of excitement and hope. I guess it’s a place that I spent a lot of time “finding myself” and really enjoy the comfort of knowing it’s always there if I ever need inspiration.

Hellooooooo, Weekend! What to do with you? I’m planning to turn our heat and humidifier way up to pretend like I’m in Florida. Or maybe I’ll embrace the cold and build a fort / drink gallons of hot cocoa? Hmmm, choices choices!

Anyhow, here are some inspirations from the week…

 

      

 

1. Vacationing has been on the mind. I’ve already started planning all of our summer camping trips. I’m thinking 3 day weekend to the Smoky Mountains and a 9 Day trip out West (Lake Powell, Grand Canyon, Zion National Park, Colorado Monument, Santa Fe, etc). And then, as always, our yearly weekend trip to Turkey Run.

2. Another trip I’ve been planning is Florida…and, by planning, I mostly just mean clothes / accessory shopping. I want a high-waisted swim suit SO bad but am worried about weird tan lines? Oh no…functionality or fashionable? Sounds like I’ve got some real life problems here.

3. Salted Honey Almond Butter. Do I need to say more? A lovely commenter suggested making your own almond butter for my No Bake Salted Dark Chocolate Almond Bites and I could not agree more!

4. You have no idea how much I really really really want new glasses and I really really really want these! Yes, please.

 

Okay, a whole lot of lusting over places, items, and wants this week. Hope everyone has a wonderful weekend! I’m off to try to calm this consumerism craving with some homemade cleaning supply making.

Winter Wandering

Hope everything is having a relaxing Sunday! We’ve spent the day trying to enjoy the snow and laying around with our puppy. Here are a few snap shots I took of Wyatt / Tuko on a winter walk earlier (minus the last one – Wyatt obviously took that one since it’s of me). Not a bad day. Not at all.

Sorry to hound you with ANOTHER post not related to food (is this even a food blog anymore? Just joking!) but I’ve been busy spending the last few days organizing. I finally updated the VV facebook page (the old one was a little bit…okay, a lot outdated). And I also organized my 10,000+ (eeep!) photos from the last few years.

This leads me to the topic of this post. I am sort of a Film nut. I know digital is all you need these days with filter programs like instragram and vsco but there is something about 35 mm film that I cannot give up. The whole experience of traveling the country with a few disposable cameras is like no experience that an Iphone can replace. Within the last two years, Wyatt and I have traveled North [Lake Michigan], East [Maine, Pennsylvania], South [Florida, Austin], and West [Utah, Arizona, Colorado, Portland, Seattle] and every time we bring our Fisheye, Holga (for double exposures), and expired disposable cameras (we usually pick these up from goodwill for a buck). This has caused the product of dozens and dozens of beautiful (film) photos. I have no many that I didn’t want to just make…a Facebook folder out of them (LAME) so I created this little online zine. It’s nothing special (I am no designer by any means) and won’t ever be in print but it’s a nice little zine of my favorite film pictures. Check it out here!

Searchable Saturday’s Time! Here are some inspirations from the week…

 

     

 

1. Chocolate and [sweet] Potato Chips?! Ohhh mannnn. These are gonna be awesome!

2. I’ve got planning my garden on the mind and have been daydreaming constantly about fresh picked tomatoes, basil, lavender, and cucumbers…

3. Long hair has made me super lazy and I feel like I only ever wear it down. Not anymore! Starting this week I am going to take back the fun parts of having long hair and play around with it!

4. I started on a crazy time consuming and oh so awesome project this week. There are so many photos from traveling to Maine, Austin, Portland, Colorado, Utah, and Florida over the last year and a half that I’m determined to do something about it. I’ve embarked on creating an online zine of all my favorite FILM photos and cannot be more excited. I’ve posted a few of them on pinterest so hop on over there for a preview. More details on this soon!

Southwest-Road-Trip

I’ve been feeling a bit…uninspired by my actions around VV lately. Can you tell? It just seems like I get into a groove and then get bored with the formula after a few months. Perhaps it’s the prospect of the temperature getting into the 60′s (!!!) this weekend that has sparked my winter dormant self to feel energized with ideas. You know…the feeling where you want to stop wearing that same black sweater and pull out those high-waisted shorts and crop tops. The same self that wants to get lost in the woods and go skinny dipping in the lake. And pull out my 35mm and take a cross country road trip. You know, the feelings that makes your heart race and lets you feel alive? Those feelings.

Something else that sprung this feeling was reflecting on my life and music [sounds like the beginning of a cheeeeeezey memoir]. I went to school for music and then chased my dreams down to Nashville to try to pursue the music industry. I used to read music books non-stop in my free time (which has now turned into food books), watch rock documentaries with my morning coffee, go to shows every other night, and only date musicians. As time passed, I settled into working for a music distribution company that distributes dozens of independent labels. Pretty cool, right? Well, yes and no. Now it’s my job to go to shows every time our bands come through. And it’s my job to read Pitchfork and StereoGum daily. And it’s my job to schmooze with other musicians in our music scene. Somehow, when you stop doing things because it’s your hobby and you start doing things because you have to, they become less fun.

So, as we turn a new leaf [the year changing and all], I’m going to make it a goal to get back into music. Whether that means listening to a new album everyday or going to 1 [non-work related] show a month. Whatever it takes. I’m going to take my music taste back and stop being so knee deep in the daze that is popular indie rock.

Now, the weird part. How in the world do I incorporate that into my blog? Skinny dipping doesn’t exactly make my soup shots look more appetizing. Or adventuring cross country doesn’t give me more time to expand on what I’m doing here. And music certainly does not give my kitchen better lighting. Well, I’m not exactly sure how to incorporate all these feelings but I think I am going to start with matching a song to the recipes I post about. And posting more pictures from random adventures [which also means I will need to start taking more random adventures - score!]. And using some more color around here…and perhaps a new, hipper font? Caviar dreams – you don’t ALWAYS inspire me like you should. And stop looking for so much inspiration in other food blogs [which usually just leads to criticizing my own]… instead looking to travel blogs, vintage stores, and art exhibits. 2013, I am ready for you!

The recipe posts have dwindled to only a few a week since the summer because the lack of daylight is really cutting into my ability to photograph everything I create/munch down on. However, have no fear because we are hosting a Friendsgiving tomorrow so I plan to spend the whole day in the kitchen cooking (and hopefully photographing!).

Persimmon Pudding

Persimmon pudding + vanilla bean ice cream = !!!

Last Sunday I attempted to go apple picking at a nearby orchard with Wyatt and a few friends. Although all the apples had already fallen from the tree, we had an enjoyable time checking out the tiny orchard shop filled with homemade dips, vintage candies, fresh produce, and more. As we were exploring, I came across a random cooler in the back corner labeled ‘persimmon pulp’. I had never heard of a persimmon before and was rather embarrassed when I sloppily tried to pronounce it only to be corrected by a nearby friend. He continued to tell me that his parents have a persimmon tree, they made pudding out the fallen fruit every year, and he had even made a short video about the process.

So… as a learning experience to myself (and perhaps you!), I purchased a container of the pulp and stick it in my fridge for later use.

And thus, later came this morning when I thawed the pulp and whipped up my first ever batch of pudding! If those pumpkin cinnamon rolls and apple crisp tasted like Fall then this taste like Thanksgiving [am I allowed to use events as describing words for flavors? well, I just did]. It’s loaded full of nutmeg and cloves and has a similar texture to pumpkin pie filling. Oh man, it’s so yummy!

Moody Monday // Pumpkin Spice Mix

I know we are all super excited for Fall but it was still quite the slap in the face this morning when we woke up to it being 39 degrees out. I’m not complaining or anything but HOW DO PEOPLE GET OUT OF BED WHEN IT’S COLD OUT? I can already foresee many [many] lazy days in bed with my macbook and hot tea in my near future.

Anyhow, I hope everyone had a fantastic weekend. We tried to go apple picking yesterday but the Midwestern drought that struck our entire month of July seems to have thrown off the growing season and all the apples had already fallen from the trees. Ah well, at least we got some yummy apple cider and fig jam out of the experience (and persimmon pulp…more to come on that in a future post…).

Here are a few pictures from a mid-week dinner picnic we went on last week. Nothing like watching the sunset over the lake to cure the mid-week blues. [warning: sorry cat lovers but there are A LOT of dog pictures to follow...Tuko was being extra photogenic that day and seems to have jumped into 90 percent of my photos from the evening]:

So yeah, last week I promised you that I would get the last bit of summer out of my system and move onto fall this week. That means that I won’t be posting that absolutely delicious bruschetta recipe I had hope to but I will be posting lots of cinnamon, apple, and pumpkin themed recipes this week. MMMMMMM.

Oh, and speaking of cinnamon…let’s start the week off with an essential: pumpkin pie spice. I grew up using pumpkin pie spice that was prepackaged from our grocery store but did you know it’s ridiculously simple to make your own? And on top of that, you can make it with spices that you more than likely have sitting in your pantry. How cool is that? So why not whip up a batch to use in all your fall baked goods, to sprinkle on top of warm oatmeal, and to spice your cider with?

 

Pumpkin Pie Spice

  • 4 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 2 teaspoons ground ginger
  • 1 teaspoon ground allspice

Mix together and sprinkle over everything. BAM! That’s it.

Store in an airtight container with the rest of your baking spices.

A picture of Tuko & Lake Monroe from our dinner picnic. We went on a hike/picnic Wednesday night which was the perfect cure for the mid-week blues.

Morning, Morning, Morning! Here are a few inspiring things I stumbled upon while enjoying my morning cup of chai:
1. My two favorite things have finally come together in a beautiful monthly package (and receiving surprises in the mail is up there as a favorite as well): music (more specifically- music on vinyl) and cooking. This adorably clever project sends you a monthly package filled with an exclusive 7″, recipe cards, and spices to accompany your dinner. How awesome is that?! Now if only I had come up with this idea…

2. I’m preparing for a blog facelift which means many hours spent looking at logos, fonts, and color schemes. Upon my ‘research’, I came across this font. SO cool!

3. I have such a weakness for cute typography and colorful visuals. Look at these adorable DIY birthday cards! Best part? You can print them out and give them to all those Fall birthdays you know!

4. Bon Appetit recently released an article on the science behind food pairing. Find it weird that there are some foods which seem to be absolutely irresistible together? There is probably a scientific explanation behind that!

5. Sprouting from a slight fantasy of wishing I had grown up as part of the Portland vegan food scene in the 90s, I have such a weakness for zines and hand drawn food photos. Not only does this Tea is Magical photo portray exactly how amazing tea is, it also looks like it could have been pulled from a 90′s art magazine.

6. I know I already mentioned the newest edition of Chickpea Magazine earlier this week but take a look at these photos to get an idea of the types of recipes in the newest edition!

7. With the weather changing, I am already starting to stock up on fun things to do inside to keep me busy during the looooooong, cold months ahead. Hop on over to DesignSponge to check out this amazing looking DIY foot soak made out of honey that will be perfect after a long day in the chilly Midwest.

8. The reasons I love fall are absolutely endless but one that I must point out is that it’s boot season. I am so. in. love. with. boots. My co-worker commented the other day that I’ve worn a different pair of boots every day this week. Guilty. I can’t help it! I need a pair in every color, ankle and over the knee, with laces and slip ons. Speaking of boots, I may already have a dozen pairs but I think these would be a perfect addition to my collection.

Fall Curry // Collaboration with Dishes Undressed

With the seasons changing and the weather being so gloomy, it has triggered a state of reflection within me. I spent a few hours looking through old pictures (I’ve been trying to gather all my favorite pictures together to print but whenever I sit down to try to do this…it just ends in me spending hours getting lost in old memories). Anyhow, these two pictures are from a trip we took down to Austin for South by Southwest a few years back. I went to SXSW a couple of times in college and was determined to move to Austin eventually. Actually, it was both Wyatt and I’s goal to move to Austin so we made plans to move together when I graduated (he is a year older so he stuck around Bloomington waiting for me to finish school). Anyhow, then we both scored cool jobs working for independent record labels and we decided to put it off for a year to “save up”. But to be honest, we aren’t saving any significant amount of cash for a move and I’m starting to wonder if Austin is still even in our cards.

A big decision like moving (especially just to move…not because of a job or family) just seems to get so lost in the day-to-day that is our current life. It’s been a goal of mine since I was 18 to get out of Indiana but now it just seems like such a far away dream. Why put all that energy into moving and starting over if you are content with where you are at? Hmmm.

Just some thoughts. Who knows where we will be in a year. Or five. Or ten. Guess that is the beauty of it all.

Switching gears completely….

Anyhow, something that is not new but totally awesome is my collaboration with Angie over at Dishes Undressed. Last night I cooked up the most delicious fall curry from a recipe she suggested to me. It was chocked full of butternut squash, chickpeas, lemongrass (!!), and Middle Eastern spices.

This is the second time I’ve cooked with lemongrass (both thanks to Angie) and I am hooked. This is a bit challenging for me because curry is totally one of my “go to” dinner meals but for 1. I never keep track of measurements (which is probably why I rarely post about curry) and 2. I’ve never used lemongrass in them before. Woah! Adding lemongrass opened up a whole new world of curry to me! The subtle citrus flavor from the lemongrass really helps bring out all the spices.

And this recipe could not have come at a better time since I just picked up some gorgeous butternut squash at the Farmer’s Market over the weekend!

Serve with warm naan bread, white rice, and maybe even a little yogurt (if you like your curry a little creamy. I personally don’t like spicy but Wyatt does so I make curry with a little heat and then add yogurt to help cool it down for me).

Fall Curry

  • 1 Tablespoon vegetable oil
  • 2 Tablespoons curry paste (I used red paste and added turmeric but use yellow if you have it on hand)
  • 2 large lemongrass stalks, whole but bashed with the back of a knife (this step was really really fun)
  • 1 Tablespoon mustard seeds
  • 3 cardamom pods
  • 1 butternut squash, cut into 1 inch cubes
  • 1 onion, finally chopped
  • 1 can coconut milk
  • 1 cup vegetable broth
  • 1 cup chickpeas, cooked (and drained if you are using from a can)
  • 1 lime
  • handful of mint leaves, to garnish
  • naan, optional
  • rice, optional
  • plain yogurt, optional

In a large pot, heat the oil over medium. Add the onions, curry paste, lemongrass, mustard seeds, and cardamom pods. Cook for about 3 minutes or until fragrant. Next, add in the butternut squash and saute for another 5 or so minutes. Finally, add the coconut milk and broth. Bring to a boil and reduce heat to low. Let simmer for about 10 minutes and then add in the chickpeas. Let simmer for another 10 to 15 minutes or until the butternut squash is soft and the liquid has evaporated to a desired consistency (also, if the liquid dries out and the squash still is not done…add a little more broth and continue to let it simmer).

Remove from heat and discard lemongrass.  Serve over rice and garnish with fresh mint.

Enjoy right away in your favorite hammock before it’s too cold to be outside for dinner!

Moody Monday: Lake Michigan Bound // Preserving Pesto

Hey all! Hope everyone had a fantastic weekend! You may be seeing me post less and less ‘Moody Monday’ posts as we move forward because I’ve been trying to incorporate more day-to-day things into regular posts. This means that a regrouping at the beginning of the week is starting to feel a bit unnecessary. But either way, I do enjoy posting about my weekend so today I am going to!

Wyatt and I ended up taking our spontaneous road trip up to Lake Michigan and went camping for the weekend. It was a much needed adventure! We were so back and forth on going because we have been so busy lately that taking the weekend away from our house just did not seem like it was be a de-stresser. Instead, I felt like I should probably stay home and that I would find relief in cleaning up around the house, being lazy with some tea and a magazine, and watching movies with my boyfriend. However, these are things I’ve been doing for the past month so making myself get out of my comfort zone was a perfect change of pace. There is something about listening to the waves crash along the shore and gazing out into endless water that is so soothing. The perfect cure to a stressful month!

I am so glad we took this trip because it may be our last camping trip of the season. And the weather was cool which meant all weekend long flannel wearing and crisp evenings by the fire. Helllloooooo, Fall!

Anyhow, shifting gears…am I the only one who seems to have mounds and mounds of basil taking over my backyard? Well, I’m guessing not and although I currently loathe the flavor of basil because it has been in pretty much every dish I’ve made for the past 3 months… I know come February I will be missing summer bounty like woahh. So, in attempt to spare my future self of the winter blues, I whipped up some pesto and froze it in ice cube trays for the cooling months ahead.

These cubes will be perfect come winter when you want to add a bit of pesto to stews, pasta, or pretty much anything that comes to mind! Just remember to top the cubes with olive oil because it will prevent the pesto from getting freezer burnt. Also, I omitted the Parmesan so that my pesto will be more versatile but feel free to play around with it! And lastly, feel free to double or triple this batch if you have a ton ton ton of basil on hand.

Preserving Pesto in Ice Trays

  • 4 cups basil
  • 2/3 cup nuts of choice (I used cashews that were soaked but feel free to experiment)
  • 1/2 cup + 1 Tablespoon olive oil
  • Ice tray

In a food processor or blender, pulse the basil, nuts, and 1/2 cup olive oil together until a thick pesto has formed. Pour evenly into an ice tray. Drizzle the extra tablespoon of olive on top of the prepared pesto. Stick in the freezer overnight and then transfer to an airtight bag. Store in the freezer for up to 6 month.

Veggie Fritters with Tomato-Corn Relish

This has been a very stressful Friday. Wyatt and I were suppose to go camping last weekend for my birthday but the weather forecast had other plans for us (in the form of lazy days consisting of DIY projects and Game of Thrones). Although our weekend ended up different from we had planned…it was still fantastic. Plus, we figured we would just try camping again this weekend. So as of Monday, we were thinking we would go camping this weekend. And then Thursday rolled around and no planning still had been done. And when we realized this…we decided it was just too much work to try to bother with. And then we packed the car today on our lunch break. And then on the way back to work from our lunch break we discussed maybe not going. So now…it’s an hour until Wyatt gets off work and we will have no idea if we are going away for the weekend or not. Ah well…either way, it was be a spontaneous adventure or a productive weekend at home..both win, wins!

Anyhow, as a way to avoid thinking about the inevitable “no, you pick” conversation that is in my very near future, I am going to write to you guys about these delicious veggie fritters I whipped up for dinner the other night. These were a great way to use up a bunch of produce I had in my CSA box and I was able to only fried up half the batch (which was the perfect amount for two) and saved the rest for the next day.

We ate these as a main course but these would be great as an appetizer if you are having a party!

 

 

Veggie Fritters with Tomato- Corn Relish

Veggie Fritters:

  • 2 russet potatoes, grated
  • 2 large carrots, grated
  • 1 large zucchini, grated
  • 1 cup onion, chopped
  • 1/4 cup all purpose flour
  • 3 garlic cloves, minced
  • 2 large eggs, light beaten
  • Olive oil

 

For the Relish:

  • 3 cups corn
  • 1 1/2 cups chopped tomato
  • 1/2 cup chopped fresh basil
  • 1/4 cup chopped onion
  • 3 teaspoons olive oil
  • 1 garlic clove, minced
  • salt/pepper

 

To make the relish: Mix all ingredients in a bowl and refrigerate until ready to use (make sure to do this first so that it has time to absorb all the flavors).

Wrap a towel around the grated potato, carrots, and zucchini and squeeze out any excess water. Transfer vegetables to a bowl and add in the onion, flour, eggs, and garlic. Season with salt and pepper.

Heat a tablespoon of olive oil in a large skillet over medium. Use a 1/4 cup measure to scoop patties onto skillet. Cook for 3 to 4 minutes on each side (or until browned). Remove from skillet and let drain on paper towel while you prepare the rest of the mixture.

Serve with delicious relish on top!

Farro Salad with Roasted Veggies (recipe coming soon!)

Heyyya Heyyya Heyya! Hope everyone is having a fantastic weekend. Here are a few things that inspired VV this week:

1. Funkytime magazine came out with their online summer edition! So inspiring! I want to make the sharpie lamp shade.

2. I have so so so so so so so much eggplant in my house right now. We got bucket loads in our CSA box this week so be prepared for lots of eggplant recipes and let me know if you have one you think I’d like. I am thinking these BBQ Eggplant tacos with Peach-Lime Salsa are a must.

3. VV turning 1! I know that is totally lame that I am doing a shout out to myself but it’s super inspiring to know that I’ve made it a year and am going stronger than ever!

4. Wyatt bought me a donut pan for an early birthday gift. Where to even begin? Maybe here or here??

5. Fastest friendship bracelets ever? Might have to make some of these at the lake this weekend!

6. I’ve been saving up all my veggie scraps all summer (if only you could see the mess that is my freezer!) to make vegetable stock out of them come fall. Here is a great list of veggies to save and ones to avoid.

7. I live in an old musky house so if we leave the windows closed for too long it kind of gets a stale smell. Very excited to try this scent when we are lying around the house this fall (maybe add some cinnamon to make it more fallish)!

8. Speaking of fall….I’m glad to find out that I don’t have to ditch sangria come September because of delicious apple and cinnamon recipes like this.

9. And finally…before I wish summer away completely, I need to make these cherry chocolate floats!
