Keeping true to the simple Sunday philosophy, I’ll keep this short! I love making this green tomato salsa recipe when my garden is overflowing (or on its last leg) since you can use whatever kind of herbs you have on hand. I used a mix between the green tomato variety that is green when ripe and a few unripened cherry tomatoes to give this fresh homemade salsa a variety of texture.

You can use whatever color tomatoes you have on hand to yield the same results (I just loved the pop of green). Be careful not to use too many unripened tomatoes in this though as I’ve heard it can cause upset stomachs for some.

This homemade salsa with fresh tomatoes is great lathered on roasted vegetables, drizzled into stews, or enjoyed in scrambled eggs.

The ingredients needed to make this green tomato salsa recipe are few. Here’s what you’ll need to make it:

  • Fresh herbs
  • Green tomatoes
  • Blanched almond slivers
  • Garlic
  • Olive oil
  • Salt and pepper

How to Make Green Tomato Salsa

This fresh tomato salsa is so incredibly easy to make. Here’s how I made this green tomato salsa:

  1. Chop up all the ingredients.
  2. Add everything to a bowl and mix to combine.
  3. Serve immediately, or let the mixture sit for 1 hour.

How Long Does Fresh Salsa Last?

This fresh green tomato salsa will last 4 to 6 days in the fridge. This is a fairly hearty salsa, so the green tomatoes shouldn’t soften too much over time.

Can You Freeze Fresh Salsa?

I don’t recommend freezing this fresh homemade salsa. Between the green tomatoes and the herbs, I worry that the texture of the salsa would change drastically once frozen.

Tips for Making Green Tomato Salsa

Note that this recipe calls for green tomatoes, NOT tomatillos. They’re two distinct veggies that have totally different textures.

When dicing the green tomatoes, be sure to remove the stem and the white core. Both are very tough and can’t be eaten.

You can use any herbs you’d like in this homemade salsa with fresh tomatoes. Chives, basil, sage, mint — mix and match however you’d like!

  • 1 cup fresh herbs (such as chives, basil, sage, mint, etc), chopped
  • 1/2 cup green tomatoes , diced small (I used a mix of green variety and a few unripened cherry tomatoes)
