Smoked Gouda Pimento, Lettuce, and Tomato Sandwich

This Smoked Gouda Pimento, Lettuce, and Tomato Sandwich is a delicious vegetarian main (perfect for lunch!) to enjoy during peak tomato season! Think of this as a vegetarian’s BLT with smoky cheese sauce instead of bacon to compliment the crisp lettuce and juicy tomatoes.

Ingredients

  • 1 cup shredded smoked gouda cheese
  • 1 Tbsp cream cheese softened
  • 1 Tbsp chopped pimento
  • 1/4 cup mayonnaise
  • 1/4 tsp salt + more for taste
  • dash of pepper
  • 4 slices of bread (preferably a sturdy bread like sourdough or ciabatta), toasted
  • 4 pieces butter or iceberg lettuce
  • 1 large heirloom tomato (or 2 small), sliced

Instructions

  1. In a medium mixing bowl, mix together the smoked gouda, cream cheese, pimento, mayonnaise, 1/4 tsp salt, and dash of pepper.

  2. Spread the pimento cheese dip evenly among 4 pieces of toasted bread. Top each piece with lettuce and tomatoes. Try a bite and season with more salt and pepper, as needed.
