Curry Quinoa Salad

This Curry Quinoa Salad is adapted from Mandy's Gourmet Salads cookbook which features recipes for lettuce and life.

Course Salad
Servings 1 serving


For the dressing:

  • 1/4 cup plain yogurt
  • 1/4 cup mayonnaise
  • 2 Tbsp honey
  • 1/2 tsp curry powder
  • 1 garlic clove, minced
  • 1/2 tsp hot sauce
  • salt and pepper, to taste

For the salad:

  • 2 cups mesclun greens
  • 1/2 cup cooked quinoa
  • 1/4 cup grated carrots
  • 1/2 cup pitted and halved cherries
  • 1/4 cup drained and rinsed cooked chickpeas
  • 2 Tbsp diced celery
  • 2 Tbsp diced red bell pepper
  • 2 Tbsp roasted salted cashews
  • 2 Tbsp torn basil leaves


For the dressing:

  1. Whisk together the yogurt, mayonnaise, honey, curry powder, garlic, hot suace, and a dash of salt and pepper. Taste and add more salt and pepper, if needed. Set aside.

For the salad:

  1. Add all the salad ingredients into a large mixing bowl. Drizzle in dressing and use tongs to toss until the salad is well dressed. Enjoy right away.
